Shrimp Tacos

Shrimp Tacos

Preheat oven to 400 Fahrenheit

Lightly oil a rimmed baking sheet with a neutral vegetable oil

In a large mixing bowl, mix together (this is for a mild spice mix—ramp up the spice to your taste if you like)

1 tsp mild chili powder

1/2 tsp sweet smoked paprika

1/2 tsp cumin

1/2 tsp kosher salt

1 1/2 tsp garlic paste

1 Tbsp lime juice

2 Tbsp unsalted butter, melted

Stir in 1 lb shelled, deveined shrimp

Spread the shrimp on the baking sheet in a single layer, evenly spaced.  Roast 8-10 minutes, checking at 8 minutes.  Be sure not to overcook or the shrimp becomes rubbery.

Build the tacos with the accompaniments of your choice—could be lettuce, could be shredded cabbage, you could use corn or flour tortillas, avocados or guacamole, sour cream or not!  I don’t personally care for cheese with shrimp, but you just make the choices that are good for you!
