A personal kitchen diary. I try new recipes and make notes on what works and what doesn't. Sometimes I can things, and sometimes I dry herbs. This is the story of my kitchen.

Fast and Easy Canned Chicken Chili

Fast and Easy Canned Chicken Chili
Gourmet this is not.  But, it was so good that I decided I needed to write it down so I could repeat it later.

I was just going to eat a can of chicken for dinner when I noticed that the label on the can had recipes inside.  I didn’t make one of the recipes, but it gave me ideas.  This ended up being really good, fast, easy, and used things I generally always have in the pantry.  Mostly canned goods!
Fast and Easy Canned Chicken Chili
2 Large cans chicken, drained
1 can dark red kidney beans
1 small can enchilada sauce
1 can Ro-tel
1 T chili powder
1 T cumin
1 T garlic salt
1 T oregano
1 t onion powder
Stir it all together, bring to a boil, then lower to a simmer and simmer for 30 minutes.
I topped this with some greek yogurt (didn’t have any sour cream) and some home canned pickled jalapeños.
