Grilled Cheese – Gouda, caramelized onions and roasted mushrooms

I tend to be a little wary about Pinterest recipes but this is one I tried and moved to permanent pin status. That is, if you can call a grilled cheese sandwich a recipe!

Preheat the oven to 400 Fahrenheit and while it is heating slice the mushrooms. I make fairly thick slices or the roasting will turn them into mushroom chips.
Toss the mushrooms with olive oil, salt and pepper.  Spread in a single layer on a baking sheet and roast for 20 minutes, stirring once.
Grate some Gouda cheese.

In the Pinterest recipe it will tell you how to caramelize the onions. I happen to usually have some packages of caramelized onions so all I needed to do was heat some up.

I bought this really great local bread. It’s packed with seeds and grains. I like a hearty, whole grain bread for this sandwich.
The recipe will have you melt butter in a skillet. I think it’s too greasy that way. So I butter one side of each slice of bread.
After heating the skillet over medium heat the layering begins.
Bread butter side down, layer some of the Gouda.
Then the onions.
Then the mushrooms.
Then the Gouda again.
And top with the other slice of bread, butter side up.
Carefully flip the sandwich and then let it grill 2-3 minutes. Flip it back, then 2-3 minutes more.
