Turkey Soup aka What to do with Roast Turkey Leftovers
I was happy to have turkey leftovers from Christmas dinner. We had sandwiches and simple reheated plates with turkey, mashed potatoes, and gravy. Now it was time for one of my favorites, turkey soup.
First, the carcass goes in a big pot, with a few inches of chicken broth (or water and bouillon, or stock, whatever you have on hand). I bring to a boil, lower to a simmer, and partially cover it. Let it simmer away and check every so often.
When the meat falls off the bone, it’s done. Let it cool and pick the meat off the bones. Discard the bones and chop the meat then put the meat back in the pot.
Sauté onions, carrots and celery in a bit of olive oil until just softened. About ten minutes. Put them back in the pot with the meat.
As it happens I had a few cups of drippings from the turkey that I added back in. But you could use chicken stock, broth, or bouillon and water.
You can cook some rice and add to the heated soup.
Or bring some soup to a boil and cook some noodles in it.
Nothing fancy but it tastes great.
